It’s no surprise that I love Hawaii! My husband David and I have travelled there the past 3 years in a row, and you can always catch us listening to Hawaii 78′ (beautiful song if you have not heard it).
On our most recent trip, we had just finished a hot power yoga class and were looking for a refreshing smoothie. We found a shop a block away from the studio that had a Kailua Dreamin’ Smoothie on their menu. It was filled with greens, pineapple and mint – so we had to give it a go. Long story short, we returned almost every day for that smoothie!
We may now officially be in winter, but with all of the holidays and cold weather, a little green and Hawaiian pick-me-up may just be what you need this time of year! So below is our take on the Kailua smoothie…
Here’s what you’ll need:
-1 cup spinach and/or kale
-½ cup frozen pineapple chunks
-2 tbsp. chia seeds
-2 to 4 mint leaves (can adjust to your taste preference)
-1/2 cup+ of coconut water
Place all ingredients in a blender. Add more coconut water if needed, and blend until smooth or until your preferred consistency. Enjoy!
